I’ve always liked the classic cod croquettes made with a base of white sauce, they are my favorite, but today I wanted to innovate, hence these potato and cod croquettes. Ingredients for six persons
- 5 medium potatoes, 200 g of codfish crumbs, 2 cloves of garlic, 3 branches of fresh parsley, salt, ground black pepper, flour of wheat, bread crumbs, 1 egg, a tablespoon of extra virgin olive oil and plenty of olive oil for frying.
How to make potato and cod croquettes
We started putting soak codfish crumbs to desalinate it, at least 24 hours in advance. We change the water three times, every eight hours to remove all the salt. Drain cod and dry it well with a paper towel.
Peel and cut the potatoes into pieces. Boil them in plenty of water during the time necessary to make them tender, which will depend on the size of the pieces. Drain well, ensuring that there are signs of water, and crush them with a press potatoes or a fork into a paste.
While the potatoes boil, heat a couple of tablespoons of olive oil Virgin extra in a pan and sauteed garlic, peeled and finely chopped. Before you take color, add the cod and stir so it just as it is cooked. It will loose too much water, so fry it until it is dry.
Add the mashed potatoes, a couple of tablespoons of bread crumbs, chopped fresh parsley, and season to taste. Stir until homogenous dough that we moved to a deep Bowl where we leave it to cool, cover with plastic wrap to prevent crust on the surface.
Once cold the dough, we take small portions and form croquettes. We can give you the way that we like. We sprinkle them with a little flour so that they are tightly wrapped all around and had them beaten egg and bread crumbs before FRY in very hot oil. We serve immediately.
